Statute of limitations, choice of law

I'm researching this for a friend, but it's a bit outside of my field, so maybe one of you knows this off hand... If the credit card holder resides in Arizona and has signed the credit card agreement in that state, but the card company is located in another state, I assume there would be either federal or Arizona jurisdiction. Now, if the Arizona statute of limitations is 3 years, but for example the New York statute is 6 years, could the N.Y. statute apply through a choice of law clause in the small print? He doesn't have his original agreement any more, but the collectors are going after him for a debt that is 5 years old.
