You really don't have to prove anything - they are the ones who have to prove you owe them this money. I didn't read your post correctly the first time. but it doesn't matter, it just would have been fun to do it with the proof in your hand, but you can do it without it, since the burden of proof is on them.

Just outline the sequence of events, what they did, what you did, what you want then to do now, use it for the basis of your letter. Tell them if they make it right (delete) you will not sue, if they refuse or ignore you, you will sue. Give them time to answer, then, if they don't delete it, sue them. Any agreement they offer - get a copy in writing so you can enforce it by resuming your suit.
