SOL in NY for everything, written contracts, oral contracts, promissory notes, and open accounts (credit cards) is SIX years. For judgments, the SOL is 10 years, but its also renewable, so it can go on for a long time.

What kind of 'supporting documents' are you waiting for ? That may not work, but you can reschedule a court date once, I don't know that you have to give a reason, I'd just say that you can't get off work for that date. That should buy you time to get your documents.

And no, throwing yourself on the 'mercy of the court' is NOT a good idea. Its a fantasy, courts have NO MERCY !!
