Dispute with merchant - what are the rules?

A dentist asked for a credit card slip for $800 to secure an appointment, and I was told that the card would not be charged if the appointment did not happen. My son got sick shortly before, so we cancelled and we also asked for his files for a second opinion. The dentist is making noises like they will charge me anyway. What are the rules around such disputes? What can I do to forestall or fight this charge? I assume I have to wait until I'm actually charged. Thanks for any help.
