Personally, I would ONLY pay them with either a cashier's check or a money order. All you have to do for proof of payment is keep the receipt that bank gives you. You could also double that by sending the payment to them via certified, RRR mail.. more proof you sent it and that they received it on a specific date.

There are no guarantees, really. However, if you get everything in WRITING as to the sum you are to pay, when, and whether or not they agree that the account is paid in full and noted as 'paid as agreed' on your CR, with a valid signature from them, you should have all the legal backup you need should they try to renege (sp?) later. Don't send them a penny until you have a signed agreement from them.
