You can appear and answer in court and dispute the amounts and balances due.

You can produce the cancelled check as proof of payment to reduce the balance.

I do not suggest you produce proof of the check you stopped payment on, as any Court would consider that as "bad faith".

You probably will be able to work out a mediated settlement,but unless you can prove hardship,it is going to be unlikely you will get off the hook for less than the full balance plus interest and legal fees.
