If a creditor sues, do we have to list any transfers within the last year?(Like with Bankruptcy)

Also, if we stop paying on the credit cards, and several months later start converting nonexempt assets into exempt assets, is that o.k.? Or will it all be undone, because we were not paying creditors at that time? Thanks
