Process of Requesting Postponement?

If I wanted to request a postponement of a court date to organize my defense because I was not served properly or in atimely manner, does anybody know how to go about this?
I am hoping you guys can tell me, because some of the court office employees act like I am suing them if I even ask them a question or request a form from them...
