sending to collection after check is cashed

I recently had some goods shiped to my home and paid the freight company with a cashiers check. A few months later I recieved a demand for payment and having discarded my proof, paid again, and wrote on the back of my check *by cashing this check payee certifies all claims against debtor settled." After this check was cashed the freight company sent me to collections. What laws have they broken and what can I do to them? thanks,
