Answering a summons

we agree with the majority of the summons in the last paragraph but it states the fee we owed OC $..., and statutory costs of $.... attorney fee, $... filing fee, and costs of service.

My questions is if we admit to the complaint, what do we do about the costs of service portion? I don't want to admit and then get socked with bogus charges.
Can we admit to all but the costs of service? and how so?
Also saw something about signing the documents "pro se" what does this mean?
