Ok, I don't remember the particulars. What state are you in? Is it still within SOL? What is the amount in question and is it Small Claims court?

The reason why I ask is because most Small Claims courts do *not* allow discovery. Were the interrogatories stamped by the court clerks? If the documents weren't filed with the court, then they can go whiz up a tree! It means that they know the court doesn't allow discovery and are trying to get information on the sly.

If you don't have what they ask for and you didn't reference any such documentation in your answer, then you simply don't have it. But if the court allows discovery, has agreed to it, and it's been filed with the court and properly served to you, then you need to respond.
